Nose: There is an initial attack of youth with an alcohol burn. After it beewax, honeycomb, vanilla starts rushing out. They are followed by red berries, a hint of smoke, and citrus. Some water brings out incredible custard notes
Palate: Lovely malty sweetness. Young stone fruit accompanies it with some apricots, white pepper hit and a creamy texture.
Finish: Medium to long finish with mouthwarming qualities and pears.
Israeli distillery Milk & Honey made their debut with two of their Whisky In Bloom bottles exclusively made for the US.
For a small bit of brand's background you can read my article.
The first expression Double Cask was aged in ex-red wine STR casks and ex-Bourbon barrels. One can feel what the distillery is planning with this bottle!
It is not there yet, still have time to grow and develop. However, for a two year old whisky from Israel, this is pretty lovely!
Their Lightly Peated expression has total different qualities and a little bit more refined in my opinion.
It will be a joy to see how Milk & Honey will grow and improve as a distillery and a world whisky brand.
Israeli single malt will be a new breath among Indian, Japanese and Australian single malts.
