Color: Dark brown
Nose: Toasted malt, hops, dates, ripe plums, pears, yeast and molasses. Alcohol is really well integrated.
Palate: Extraordinary! The body is huge with exploding flavors like black forest fruits, raisins, coffee, cocoa and toffee.
Finish: Long, on the sweeter side and leaving lovely traces of carob and dark fruits. Complex and lingering.

Chimay Blue is one of the best beers that I can find year round, which is a pretty important thing for me.

This Trappist is also capable of aging at least a decade. Luckily, I had the chance to try a few vintages, this being from 2013. Incredible complexity is balanced so well.

One of the tricky thing is, Chimay Blue has to be served and consumed at the right temperature. If you are experiencing this beer for the first time and you have it at the wrong temperature, you might hate it!
